Course Description

Thanks to season-extending techniques and cold storage, New Hampshire farmers offer fresh local produce throughout the winter. Farm stands remain open in many areas, and weekly winter farmers markets are held in towns across the state. According to the New Hampshire Food and Agriculture Strategic Plan, a strong local food system supports food security, economic stability for farmers and food producers, regional growth, protected open space, climate resilience and improved public health. Participants will explore locally available winter foods through tastings and recipes designed to inspire buying and eating local year-round.
