Course Description

Enrollment in AMSA Culinary Meat Selection & Cookery Certification course with UNH is currently FREE due to funding by the New Hampshire Department of Agriculture, Markets, and Food with appropriations from the American Rescue Plan (ARPA) State and Local Fiscal Recovery Funds (SFRF).

The American Meat Science Association (AMSA) Culinary Meat Selection & Cookery Certification course verifies individuals possess knowledge and skills needed to thrive within the restaurant and culinary industries.

The certification validates fluency in culinary techniques, food safety, meat selection and retail cut identification. Those who earn the certification are more qualified and prepared to enter a variety of careers, specifically those that involve the selection and preparation of meat. Additionally, the certification allows employers to identify and connect with more skilled candidates, filling gaps in the labor market and jump-starting individuals’ careers.

The AMSA Culinary Meat Selection & Cookery Certification course takes place online in self-paced modules.  The course includes a total of 150 hours of content which learners have 6 months to complete, but learners independently review content and work at their own pace.  Learners must have access to a computer with internet to participate. 

In order to successfully complete the course, learners must successfully pass (scoring 70% or higher) a 100 question examination that assesses knowledge and concepts from the course content. Those who successfully pass the examination will receive:

This course is part of the UNH Meat Processing & Food Safety Certificate program, but you don’t have to be part of the certificate program to enroll in this course.
